Recipe: Turkey and Zucchini Cakes

A favorite in my household, these are a snap to make and great as cold leftovers.
Servings: 4
Prep time: 15 minutes
Active time: 30 minutes
1 Lb ground Turkey
1 cup grated Zucchini (one medium)
¼ cup finely chopped green onion (three stalks)
3 tablespoons chopped fresh cilantro
2 tsp Cumin
2 tsp Old Bay Spice blend
1 tsp Sea Salt
4 Tbsp Coconut Oil or Ghee (clarified butter) for cooking
Preheat oven to 400F
Mix together with all ingredients and shape into cakes, around 1/3 cup size.
Heat a sauté pan to medium high, place a little oil in the pan and brown the patties on both sides.
Place on a baking tray and finish in the oven, 2 to 6 minutes.
