Recipe: Quinoa with Toasted Pinenuts

This ancient grain is rich in nutrients and high in protein. Plus, it cooks super-fast! Here it is lightly scented with turmeric.
Serves 4
1 ½ cups quinoa grain
4 quarts water
½ tsp turmeric
1/4 cup pine nuts, toasted
2 Tbsp. olive oil
1 tsp Sea salt
Rinse the quinoa a few times in filtered water. (It sounds so simple, but this is a very important step.)
Bring water to the boil in a large pot, add the turmeric and a pinch of salt.
Add the quinoa and simmer 10 to 12 minutes. The grain is done when you can see white dots in the middle.
Drain the quinoa, and in a separate bowl, stir in the olive oil and pine nuts.
