Recipe: Upside Down Blueberry Cobbler

Warm and gooey, this low sugar version satisfies. Serve with Greek Yogurt sweetened with a little Stevia for a healthier option.

 

Servings: 4

Prep time: 15 minutes

Active Time:1 hour

 

Ingredients:

1        Tbsp. butter, melted

1/2     cup Whole-wheat or Spelt flour

1        cup Organic Whipping Cream

½       cup Sucanat Sugar

1        tsp baking powder

2        cups blueberries, fresh or frozen

1/4     tsp grated Nutmeg

1        Tbsp. Vanilla Extract

 

  • Preheat oven to 375F

  • Brush 8x8” baking dish or pie plate with melted butter

Whisk together dry ingredients and stir in the cream.

  • Sprinkle blueberries on top.

  • Bake for 35-40 minutes.
